Winter Citrus Salad with Pomegranate
WASH citrus. Cut off the peel using a serrated bread-style knife. Cut into thin wedges.
ARRANGE wedges around a platter.
SCATTER with fresh pomegranate.
SERVE as is or with a blood orange and yoghurt creme’.
PREP a few hours in advance and store covered in a cool place or the fridge.
CITRUS – use whatever mix of citrus you have and love.
SWAP POMEGRANATES for berries ~ blackberries are a great choice.
ADD RAW HONEY or maple syrup drizzled as thin as a spider web across the salad.
