Whipped preserved lemon cucumber tahini sauce

Tahini brings the creamy to dairy-free sauces and dressings!  This airy refreshing creamy sauce could not be easier to whip up in a blender which gives it an almost foam-like lightness with a cooling cucumber citrus flavour.  Preserved lemons are fermented foods that contain natural probiotics for gut health and tahini, made from ground sesame seeds are full of lignans which help balance hormones and protect our cells from oxidative stress.  Sesame seeds have anti-inflammatory properties and contain good for you fats that can help with high cholesterol.

  • ½ cup cucumber - diced/sliced
  • ¼ preserved lemon - seeded
  • ¼ cup water
  • 2 tbsp tahini - sesame paste
  • 1 tbsp raw apple cider vinegar

Method

BLENDER cup or jug – blender cup is a better choice if you have one as its a small serving size

 

ADD all ingredients, blend together until the consistency is smooth light, airy and creamy 

 

TASTE adjust to your taste

 

SERVE drizzled over salads, roasted vegetables or as a dip alongside vegetables, burgers and bites.

 

STORE in a glass jar in the fridge

Serving suggestions; Summery tomato salad.  Cucumber radish salad. Dairy-free caesar salad style.  Rosemary harissa crusted cauliflower, veggie burgers, fish cakes, fish, seafood, chicken.  
Swap for mayonnaise or aioli in recipes this is a good replacement for mayo or aioli or dairy-based dressing.
Preserved lemon is salty, so I find I don’t need to add salt to this recipe,
Double the recipe if you are using a big blender jug to be sure there is enough mixture in the bottom to whip up nicely.
Add other flavours like fresh garlic, black pepper, sumac or herbs 
Cucumber you can add more, add a whole one if you like, to get the foamy-airy consistency you might need to add more tahini a tablespoon at a time, taste and adjust
