Thai Red Lentil, Pumpkin & Tofu Curry

A cosy, comforting and healthy vegetable curry with plant-based protein and whole ingredients full of great Thai-style flavours. You can’t go wrong with this recipe. It’s a crowd-pleaser with immune-supportive benefits and can be made in advance, as with all good curries; it is fabulous the next day.

 

Don’t be put off by making your own paste – it’s easy and quick if you have a decent blender; the big plus is you are in control of all the ingredients that go in – this recipe is oil-free – you might not want to go back to using store-bought red curry paste again.
