  • 2 cups grated cucumber - squeezed
  • ½ cup plain yoghurt - cashew | dairy
  • 1 garlic cloves - fine crushed
  • ½ cup chives - finely sliced
  • 2 tbsp seed dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup carrots - thin slices
  • 8 borage flowers
  • 8 small tulsi leaves


Spiced Cucumber Yoghurt + Carrot, Borage & Tulsi


MIX the first 7 ingredients until well combined – taste & adjust seasoning. 


PLATE cucumber mixture. 


ARRANGE thin carrot slices over cucumber. 


GARNISH with borage flowers & tulsi.


SERVE as a dip or a salad with crackers, Crudite, salads, bread or my Healthy Carrot Cornbread.
