Spiced Chickpea Pancakes with Greens & Smokey Tahini

A stunning and simple plant-focused plate! The pancakes are made with chickpea flour, sparkling water and spices, topped with greens and a smokey tahini sauce. You can have a lot of flavourful fun with this basic recipe switching up the toppings to suit your tastes and food style.


It is excellent topped with crumbled feta or tofu, sliced avocado + arugula, refried beans and a fried egg; you could even turn it into a pizza-style affair by adding your favourite toppings. You can cook this without oil in a good non-stick fry pan, using a splash of water between pancakes. If you like cooking with oil, you can; it tastes great!
