Skillet Black Beans & Mushroom Burritos

Black beans and mushrooms with some grounding spices and greens. Make this quick dish as a filling for burritos, tacos, nachos, burrito bowls or as a warm hearty veggie dip served with endives or romaine leaves.   

 

Wrap in corn tortillas to make burritos. Serve with salsa, Guacamole, cheese, sour cream, or Hummus, salad and fresh herbs.  Make a double batch and use it as a base for different meals for a few days to keep life simple while eating well with whole foods.
