Toasting the nuts, seeds and spices brings out all the lovely subtle aromatic flavours; if you prefer, you can skip the toasting step and make a dukkah using raw ingredients.
Sage has some potent medicinal qualities; anti-bacterial, anti-spasmodic, anti-inflammatory and digestive system support; it can be used fresh or dried; fresh sage has a more robust flavour, so adjust the amount to taste.
