Robust Red Veg Slaw

Finely sliced slaw rainbow salad ~ a straightforward, affordable dish with lots of fresh vegetables; cabbage, radicchio, flat green beans, kohlrabi & carrot, which gives great textures with balanced, juicy flavours.

 

Flat Green Beans are also known as runner beans, Italian beans, romano beans; they are delicious fresh green beans best eaten raw when young or lightly steamed. The older and larger the flat beans, the tougher they become and will have a bean seed.

  • 3 cups red cabbage - fine slice
  • 2 carrots - grated
  • 1 beetroot - grated
  • 1 small red onion - fine slice

Method

 

Robust Red Veg Slaw

 

WASH all your vegetables well.

 

FINELY slice red cabbage. Cut a small red onion in half, peel and thinly slice.

 

GRATE carrot and beetroot. You can peel carrots and beetroot first if you would like.

 

MIX all ingredients in a salad bowl or storage dish with a lid.

 

SERVE with Oil-free Orange Cider Vinaigrette 

 

STORE in the fridge, lid on, without dressing.
