Roasted Tomato & Garlic Dip

There is no such thing as too many cherry tomatoes – especially if you have this recipe on repeat!  The simplest of dishes never fails to bring joy to those who love tomatoes and garlic.


Cherry tomatoes can be frozen whole on a sheet pan freeze then stored in bags.  Grab out handfuls all through winter to bring a little summer joy to the table.  You can make this recipe using frozen cherry tomatoes – leave them whole they will take a little longer to roast.

  • 4 cups cherry tomatoes - cut in half
  • 6 garlic cloves - peeled
  • 2 tbsp olive oil
  • 1 tsp sea salt



Roasted Tomato & Garlic Dip


PREHEAT OVEN 375 F | 190C.  


CERAMIC or glass baking dish – rub sides lightly with oil using your fingertips.


PLACE cherry tomatoes cut-side-up, tuck garlic cloves around. DRIZZLE with olive oil + salt.


ROAST 40 – 50 mins until soft, juicy and golden in places.  SERVE warm or at room temperature.


Serving Ideas
Garnish with fresh herbs like fresh basil, rosemary, oregano, thyme.
Part of an antipasto platter or tomato tasting.
With olive oil toasted sourdough.
With crostinis on a cheeseboard.
As a sauce over vegetables and proteins.
Stirred through cooked pasta.
