Prosciutto, Melon & Arugula Salad

An old-school classic Italian dish can be served as a meal, canape or snack. The simplicity of this dish, as with all traditional Italian, demands using the best local melons and fresh arugula and getting freshly sliced prosciutto from your local deli.  

 

The melons this season have been fabulous! I am fortunate to live close by Winslow Farm in Falmouth, Maine ~ their melons and arugula are exceptional, along with every other piece of produce I have had the pleasure of working with and eating this season.

  • 1 melon - cantaloupe | rockmelon
  • 12 prosciutto slices - thin sliced
  • 4 cups rocket | arugula
  • drizzle olive oil - optional

Method

 

Prosciutto, Melon & Arugula Salad

 

WASH melon. Cut off top + bottom, stand upright, and carefully slice off melon skin. Cut in 1/2 – scoop out seeds. Slice half the melon into thin wedges, then slice those wedges in half.

 

PLATE rocket | arugula. Arrange melon slices over arugula.

 

PLACE a folded-over slice of prosciutto over each piece of melon.

 

SERVE soon after assembling. Drizzle with good quality extra virgin olive oil if you like.
