Pineapple Carpaccio with Rosemary

A simple yet elegant fruit dessert with a delicate herbal twist. 

 

Rosemary is a wonderful aromatic herb with many healing properties, including digestive aid, nervous system tonic, and helps boost our memory.   Pineapple has nutrients and compounds that strengthen + boost the bodies natural cleansing and detoxification process.

Ingredients

  • ½ pineapple - thinly sliced
  • ½ tsp Fresh Rosemary - fine chop
  • 2 tbsp raw sugar | honey- optional

Method

Pineapple Carpaccio with Rosemary

 

WASH + peel pineapple.  Cut in half.  Very thinly slice ½ pineapple = carpaccio.

 

LAY slices evenly and half overlapping around a platter.

 

SPRINKLE with fresh Rosemary + sugar is you are using. 

 

SERVE as is.  GARNISH with Edible Flowers – rosemary, sage, violet, forsythia, anise hyssop, tulsi, calendula.

 

STORE in the fridge covered.

 

Tips + Suggestions

MAKE IN ADVANCE – I like to make a few hours in advance to let the flavours infuse.

 

RAW SUGAR adds a nice little crunch and sweetness.  RAW HONEY drizzled as thin as a spiders web is also lovely.
