A petite shoulder tender fillet is an excellent cut that grills beautifully, is flavourful and as tender as tenderloin steak but much more affordable. Pan-sear in a skillet and cook to your liking, then remove from the pan and deglaze with water or wine + balsamic vinegar. Rest the steak for 10mins before slicing then serve over arugula and drizzle with balsamic pan-jus.
