Mushroom & Kale Quinoa

Mushrooms are nutrient-rich with vitamins, minerals, polyphenols, anti-oxidants and proteins that support our cardiovascular, gut, brain and immune systems, making them a great everyday food as medicine.

 

This is an easy recipe with great textures and satisfying umami flavours. The mushrooms are pan-seared, adding a little water instead of oil to saute; sunflower seeds are added for healthy fats; kale and parsley add mineral-rich greens, and the quinoa is a quick-cooking grain that is rich in protein and essential amino acids and is anti-inflammatory.

 

Mushrooms like Shitake, Maitake and Lion’s Mane are considered medicinal mushrooms due to their many health benefits. Shitake and Maitake are adaptogenic medicinal mushrooms and tonic foods that can help lower cholesterol, blood pressure and blood glucose, improve gut health and boost the immune system. Lion’s Mane improves nerve, neuron and brain function. 

 

Quinoa is a gluten-free pseudo-cereal or seed grain that’s sustainable to grow and is a complete plant protein with all the amino acids, making it an essential part of a sustainable plant-based diet.
