Mint Tea Melon Salad
FRESH MINT TEA – infuse 3 sprigs of fresh mint in ½ cup hot water—Rest & cool.
WASH all the fruit. Cut melon in 1/2 – scoop out seeds. Peel + dice 1″ | 2.5cm pieces
PEEL kiwi – cut in half, then quarters, then large dice. COMBINE fruit into a big bowl
REMOVE mints sprigs from Tea. Taste – add a little honey if you like
POUR tea over melon, stir gently to coat, cover and chill.
STIR then SERVE scattered with fresh mint leaves.
ADD green grapes sliced in half or fresh red currants.
USE RAW HONEY to add a touch of sweetness only if you need it – honeydew is sweet.
MINT TEA BAG – you could use a mint tea bag – the mint flavour will be different.
