Mint Tea Melon Salad

Honeydew melon is naturally sweet, and Mint is a refreshing, cooling and soothing herb that aids digestion.

  • 1 honeydew melon - peel + diced
  • 4 kiwis - peel + dice
  • 4 sprigs fresh mint
  • ½ cup water
  • 1 tbsp honey - optional

Method

Mint Tea Melon Salad

 

FRESH MINT TEA – infuse 3 sprigs of fresh mint in ½ cup hot water—Rest & cool.

 

WASH all the fruit.  Cut melon in 1/2 – scoop out seeds.  Peel + dice 1″ | 2.5cm pieces

 

PEEL kiwi – cut in half, then quarters, then large dice.  COMBINE fruit into a big bowl

 

REMOVE mints sprigs from Tea. Taste – add a little honey if you like

 

POUR tea over melon, stir gently to coat, cover and chill. 

 

STIR then SERVE scattered with fresh mint leaves.

USE RAW HONEY to add a touch of sweetness only if you need it – honeydew is sweet.
