Microgreen & Radish Salad

A simple salad with microgreens and radishes ~ swap ingredients according to what is growing in your garden and local farms. 
A lovely accompaniment to grilled asparagus and a poached egg or a frittata style dish.

 

Keep it simple or add veg you have and love ~ any leafy salad greens, hakurei turnips, asparagus, bean sprouts, bok choy, kohlrabi, red cabbage, radicchio, endive, carrots, peppers, cucumbers, tomatoes, avocados, herbs, nuts and seeds.

  • 2 cups microgreens
  • 2 radishes - thin slice

Method

Microgreen & Radish Salad

 

WASH all your salad greens – a salad spinner is a great bit of a kitchen kit!

 

THINLY slice radishes – you can add the radish greens to the salad if they are nice and fresh.

 

TOSS all salad ingredients together.

 

SERVE drizzle with a few teaspoons of salad dressing.

 

 

STORE salad un-dressing in the fridge in a glass container with a lid.
