Lemon Cashew Cream Pots

  • 1 cup raw cashew pieces - soaked
  • ½ cup lemon juice - fresh*
  • 2 tbsp raw honey
  • 1 tbsp coconut oil - no need to melt
  • 1 tsp lemon zest to garnish**

Method

Lemon Cashew Cream Pots

 

SOAK cashews in 2 cups water ideally 2+hrs.  15mins in hot water will work in a pinch.

 

RINSE and drain soaked cashews.

 

HIGH-SPEED BLENDER, add all ingredients.  Blend until you get a very smooth, light creamy texture. 
Scrape the sides down – this may take a few minutes depending on your blender and how well you soaked the cashews.

 

TASTE if you need sweetness, add 1 tsp raw honey.  IF you need more liquid to lighten the texture – taste – then add either 1 tbsp water, lemon juice or honey.  Blend, taste, adjust.

 

STORE in a glassware, jars, glass containers with lids sealed in the fridge.   You can double or triple this recipe successfully.

Tips + Suggestions

*LEMON JUICE – about 2 lemons freshly squeezed.  If you don’t get a ½ cup, you can add a little water to top it off.

 

**LEMON ZEST – do not blend with the lemon zest; the creams will become very bitter.  Use zest as a garnish

 

SWAP LEMON for orange or lime – the flavour will vary; you might need to adjust sweetness.

 

SWAP HONEY – use rice syrup, a light cane, golden syrup or any syrup with light neutral flavour.
