My dear friend and cooking mentor calls the instant pot her “magic-pot”, it is so true how magically it cooks dried beans to perfection!
Add ripe, fresh pureed tomatoes, onion, garlic and a poblano to the pot, and you seriously create something magical from patch and pantry to plate in under an hour. The beans somewhat remind me of canned style baked beans in a tomato sauce but better; this is “the best” homemade version I have ever created or eaten.
