Summer fruits blended with super seeds make a simple, light and healthy dessert or breakfast.  Seeds are rich in fatty acids, phytoestrogens – lignans, minerals, vitamins and protein that the body uses for producing hormones. 

Eating a diet rich in seeds is a great food as medicine approach to balancing your hormones, inflammation and gut health.

Parfait

  • 1 cup blueberries - fresh or frozen
  • 1 cup raspberries - fresh or frozen
  • 1 large - 2 small peaches - chopped
  • ⅓ cup super seed mix*
  • 1 tsp vanilla
  • 2/3 cup water
  • 2 tbsp cacao nibs - to garnish

Super Seed Mix

  • ½ cup raw whole flax | linseed
  • ¼ cup + ¼ cup chia seeds
  • ½ cup raw sunflower seeds
  • ½ cup raw pumpkin seeds
  • ½ cup hemp seed hearts

Method

Hormone Balancing Peach & Berry Parfait

 

BLEND all parfait ingredients in a blender until smooth.   

 

TASTE and add sweetness if you need it.

 

SERVE garnished with cacao nibs. 

 

 

SUPER SEED MIX  –  MAKES 2 cups

 

BLEND OR GRIND whole Flax | Linseeds + 1/4 cup chia seeds to a coarse flour consistency

 

ADD Sunflower and pumpkin seeds and blend again to a coarse flour consistency (or blend separately).

 

STIR in hemp seed hearts and 1/4 cup chia seeds. 

 

STORE in a glass jar in the fridge or freezer to preserve the healthy fats & oils.

SWEETNESS if you need to add some honey, maple syrup or 1 -2 pitted dates.
