Grilled Portobello Mushrooms
PREP wipe any dirt off caps + trim off stems if you like – save for another dish or stock.
FLUTED side up – drizzle a little olive oil + sprinkle salt + thyme + splash sherry or sherry vinegar over each mushroom = deepens the flavour.
HEAT your grill | BBQ. Roast in a pre-heat oven 400F | 200C
COOK fluted side up – 15 – 25mins until soft with a nice dark colour – they will have a liquid in the fluted cap = a flavour bomb – keep it – do not turn your mushrooms over during cooking.
SERVE as part of an alfresco feast, brunch or dinner. Serve with a big dollop of Kale & Green Bean Pesto or Herby Pesto, or Spinach Basil Pesto.
