Gochujang Grilled Chicken & Vegetable Rice Salad

Spicy umami chicken tops a healthy warm black rice salad of seasonal vegetables spiced with Asian flavours.

 

Gochujang is a popular fermented Korean chilli paste that brings spicy, sweet, salty, umami flavours by the spoonful to every dish.  Think of it like miso with a kick Gochujang is fermented, so it has gut-health benefits, which is why we add some not heated in the rice salad as heat can destroy beneficial bacteria. 

 

Adjust Gochujang amount to your spice level; most supermarkets carry it in the Asian ingredients section – look for the signature red container!
