with Peanut Butter & Pumpkin Seeds

Oats + peanut butter + pumpkin seeds ~ this granola is heart-healthy and protein-rich!  Pumpkin seeds are high in nutrients, antioxidants, vitamins and minerals like magnesium & zinc, which support our immune system and reproductive health.

  • 3 cups rolled oats
  • 1 cup raw pumpkin seeds - pepitas
  • 3-4 tbsp maple syrup | apple sauce
  • 2 tbsp peanut butter
  • 3 tbsp coconut oil - optional
  • 1 tsp vanilla - optional
  • ½ tsp salt - optional

Method

 

Dude Granola with Peanut Butter & Pumpkin Seeds

 

PREHEAT oven 325F/160C. Line a sheet pan with parchment or brush lightly with oil.

 

MIX whisk wet ingredients maple syrup + peanut butter, coconut oil melted, vanilla & salt if using until smooth in a bowl.

 

STIR in oats + pumpkin seeds and mix well to ensure they are fully coated.

 

SPREAD out in a single layer on the sheet pan.

 

BAKE for 15 mins, then stir with a spatula. BAKE a further 10-15 mins until lightly golden and crunchy.

 

COOL completely on the sheet pan.

 

STORE in a glass jar or airtight container.

 

SERVE with your choice of Milk, yoghurt, Kefir or fruits.

ADD other seeds like sunflower or stir in cacao nibs once cooked.
