Dude Granola with Peanut Butter and Pumpkin Seeds
PREHEAT oven 325F/160C
MIX wet ingredients: coconut oil, maple syrup, peanut butter, vanilla and salt until smooth in a bowl.
STIR in oats and pumpkin seeds mixing really well to ensure they are fully coated.
SPREAD out in a single layer on a sheet pan parchment paper-lined or lightly greased
BAKE 15mins then stir with a spatula. BAKE a further 10-15mins until lightly golden and crunchy
COOL completely on the sheet pan
SERVE with your choice of Milk, yoghurt, Kefir, Apple Berry Compote or fruits
STORE in a glass jar or airtight container
PEPITAS are pumpkin seeds, raw and shelled and should be green in colour.
ADD other seeds like sunflower or stir in cacao nibs once cooked.
