Dude Granola with Peanut Butter & Pumpkin Seeds
PREHEAT oven 325F/160C. Line a sheet pan with parchment or brush lightly with oil.
MIX whisk wet ingredients maple syrup + peanut butter, coconut oil melted, vanilla & salt if using until smooth in a bowl.
STIR in oats + pumpkin seeds and mix well to ensure they are fully coated.
SPREAD out in a single layer on the sheet pan.
BAKE for 15 mins, then stir with a spatula. BAKE a further 10-15 mins until lightly golden and crunchy.
COOL completely on the sheet pan.
STORE in a glass jar or airtight container.
SERVE with your choice of Milk, yoghurt, Kefir or fruits.
