These dark knight chocolate bites rolled in goji berry dust full of nourishing whole ingredients will sweep you off your feet.

 

Dates, walnuts, sunflower seeds and cacao blend beautifully to make a decadent sugar-free treat ~ fabulous food as medicine!

Dark Knight

  • 10 dates - 50g
  • ½ cup walnuts - 50g
  • ¼ cup cacao | cocoa powder - 25g
  • ½ cup sunflower seeds - 70g
  • 1 tsp cinnamon
  • 1 tsp vanilla - optional

Goji Berry Dust

  • ¼ cup gogi berries

Method

 

Dark Knight Chocolate Bites with Goji Berry Dust

 

ADD all ingredients to a food processor, and blitz for 2 mins. Scrape sides down to ensure the mixture will be evenly smooth and well combined.

 

BLITZ for another 1 – 2 mins until the mixture pulls into a ball in the food processor. 

 

TASTE and adjust sweetness | nuttiness, and chocolate to your liking. As you add things, the texture will change & may need balancing.

 

ROLL into small bite-sized balls.

 

COAT bites in the goji dust by dipping half of the bites into the dust. Alternatively, roll in finely shredded coconut, seeds or cacao powder as you like. Do this by putting the coating into little bowls and rolling around the bliss balls to coat.

 

STORE in an airtight container in the fridge – they need to chill and firm up before serving.

 

SERVE as part of a dessert spread, a sweet treat snack, or an energy bite.

 

GOJI BERRY DUST – put goji berries in a spice grinder or small blender and blend to create a semi-fine powder.
