Crazy Bird Cookies
PREHEAT OVEN 350F / 175C. LINE a half sheet pan or cookie sheet with parchment paper or grease.
BLEND OR PROCESS sunflower seeds to make flour with a texture like fine breadcrumbs about 15-30 seconds depending on your machine. Caution if you over blend your flour will start to turn into a sunflower seed paste.
GRATE raw cacao paste or baking chocolate or finely chop some chocolate chips if that’s what you have.
MIX all the ingredients really well, breaking up clumps in sunflower flour with a fork
TASTE and adjust sweetness, spiciness, saltiness – to make sweeter add a tbsp sugar.
ROLL tablespoon-size scoops of crazy bird mix into balls and place on a lined sheet pan, press down to slightly flatten. You can garnish tops with sea salt, chilli flakes a sprinkle of sugar as you wish.
BAKE 15mins until golden
COOL on wire rack they will crisp and harden up a little as they cool
SERVE with whatever you fancy ~ a chamomile tea ~ hot chocolate ~ an espresso martini ~ a glass of red wine.
STORE in an airtight container once completely cooled.
*SUNFLOWER SEED FLOUR; blend or process sunflower seeds to make a medium flour 15 – 30 sec. SUBSTITUTE sunflower seeds for pumpkin seeds or a sustainable nut like hazelnut or almond if almonds are sustainable where you live?
