Simple Lemon Vinaigrette

I like my salad dressings flavourful and tangy and bright, so I use more lemon for those flavours and the vitamin C, iron-absorbing, cleansing, alkalising and immune-supportive properties that lemon has.


Please adjust the ratios according to what you like and taste it when you make it and if it is a little acidic, add more oil.  Remember though when tasting it on a spoon it will be much stronger than when you are eating it as a vinaigrette your salad, vegetables & grains.

  • 1 lemon juice = 2-3tbsp
  • 3 tbsp olive oil
  • ½ teaspoon sea salt


Simple Lemon Vinaigrette


WASH your lemons before you cut and squeeze them please; lemons are intensely sprayed crops*


SHAKE all ingredients together vigorously in a glass jar with the lid on.


TASTE and adjust seasoning. 


SERVE alongside our Nasturtium Salad.  STIR 1-2 tablespoons in any raw or cooked salad just before you eat it. STIR through warm legumes and grains to brighten their flavour


STORE in a glass jar in the fridge, bring to room temperature and shake well before using

DRESS leafy salad greens just before serving, so they maintain their crispness and don’t get soggy.

SAVE the peels and infuse your cleaning vinegar to give it anti-bacterial and anti-microbial properties

LEMON squeezer is worth the investment, lemons are expensive, so I don’t want to waste any juice. I love my stainless steel lemon squeezer pictured above, its not plastic and it will not break.


WHY WASH & BUY ORGANIC – Lemons & other commercial grown citrus fruit is heavily sprayed with pesticides and chemicals, unfortunately. Wax coating is common on store-bought citrus as it prolongs the shelf life.  SO WASH + SCRUB them before cutting & zesting. Buy organic citrus fruit if you can afford it, it can be expensive. I dream of having lemon trees growing in my back yard one day!
