Salad

  • 1-2 cups cooked brown lentils
  • 1 can chickpeas - 1 ½ cups | 15oz | 425g
  • 2 cups celery - fine dice
  • 1 bell pepper |. capsicum - fine diced
  • 1 watermelon radish - fine dice
  • 2 sprigs parsley - fine chop

Method

Chickpea Lentil Salad

 

WASH + DICE all the veg about the same size as a chickpea – a good chance to hone your knife skills.

 

MIX all ingredients in a bowl.   

 

DRESS with 4-6 tbsp honey mustard dressing or oil-free Orange Vinaigrette or Lemon Garlic Tahini.

 

SERVE with Wombok Cabbage Salad or Red Cabbage Salad or Crispy Lettuce.  TOP with nuts, seeds, olives, cheese, avocado.
