Chicken, Squash & Kale Curry

Warming, vegetable-loaded chicken curry that you can make in advance. As with all good curries, they taste better the next day when the spices have had time to mingle and meld. You can make this recipe oil-free and salt-free.


Spice mixes are warming, aromatic and earthy with many botanical benefits; anti-inflammatory, anti-bacterial, digestive, warming, grounding.


Use whatever vegetables you like + curry spice mix you have & love adjusting the heat to your taste and spice level. 

I used a blend of Berbere spice mix + a curry powder mix.  You can always make a Berbere Spice Blend.    


Plant-based swap chicken for tofu, kidney beans or chickpeas.
