Blueberry Quinoa Truffles

Sweet by nature, a little wholesome bite that’s high in fibre and plant protein from quinoa gives and anti-oxidant rich with freeze-dried blueberries makes for a truly delicious vibrant nutrient-dense treat.   

 

Using freeze-dried blueberries or blueberry powder is essential to making these sweet little treats stay together as fresh or frozen berries will add way too much moisture to this recipe ratio.

MIX

  • 2 ½ cups cooked quinoa
  • 1 ½ cups unsweetened raw coconut flakes
  • 1 cup freeze dried blueberries**
  • 1 cup dried pitted dates, roughly chopped
  • Juice of 1 lemon

ROLL

  • Coat in finely chopped dried coconut, chia seeds, berry powder, sesame seeds, hemp seeds

Method

Blueberry Quinoa Date Bites

 

COOK QUINOA by following the packet instructions

 

IN A FOOD PROCESSOR add coconut flakes, blitz for 30 sec to 1min until finely chopped.  REMOVE ½ cup to a small bowl, ready to roll the finished bites

 

ADD freeze-dried blueberries with the remaining coconut flakes, blitz 1-2 mins until texture like dense breadcrumbs. **If using blueberry powder add it and pulse to combine for 20secs.

 

ADD cooked quinoa, chopped dates, lemon juice, process until the texture is like a smooth dough. 

 

TASTE and adjust sweetness; if you need more sweetness, add more dates to your taste.

 

ROLL into small bite-sized balls. COAT rolling balls in the fine coconut flakes you previously set aside. 

 

STORE in an airtight container in the fridge.

Tips + Suggestions

**USE BLUEBERRY POWDER 3-4tbsp in place of fried-dried blueberries or combination with the freeze-dried fruit.

 

SUBSTITUTE freeze-dried blueberries for banana, raspberries or strawberries but the dates may overwhelm the delicate strawberry flavour nuances.  

 

FREEZE-DRIED blueberries are essential in this recipe; otherwise, the recipe would have too much moisture content. Ground freeze-dried blueberries make beautiful blueberry “dust”.

 

SUBSTITUTE cooked quinoa for cooked millet

 

BOTANICAL HERBAL BOOST ideas; add 1-3 tbsp of herbal powders; hormone balancing, calming, anxiety-reducing, digestive herbs;        Ashwagandha, Chamomile, Lucuma, Tulsi, Passionflower, Lemon balm, Medicinal mushrooms that have been activated through heat.  Remember to consider the taste of the herbs and the energetics of the combination.
