Blueberry Quinoa Date Bites
COOK QUINOA by following the packet instructions
IN A FOOD PROCESSOR add coconut flakes, blitz for 30 sec to 1min until finely chopped. REMOVE ½ cup to a small bowl, ready to roll the finished bites
ADD freeze-dried blueberries with the remaining coconut flakes, blitz 1-2 mins until texture like dense breadcrumbs. **If using blueberry powder add it and pulse to combine for 20secs.
ADD cooked quinoa, chopped dates, lemon juice, process until the texture is like a smooth dough.
TASTE and adjust sweetness; if you need more sweetness, add more dates to your taste.
ROLL into small bite-sized balls. COAT rolling balls in the fine coconut flakes you previously set aside.
STORE in an airtight container in the fridge.
**USE BLUEBERRY POWDER 3-4tbsp in place of fried-dried blueberries or combination with the freeze-dried fruit.
SUBSTITUTE freeze-dried blueberries for banana, raspberries or strawberries but the dates may overwhelm the delicate strawberry flavour nuances.
