Method

 

Blueberry Citrus Salad

 

WASH citrus.  Cut off the peel using a bread-style knife.  Cut into thin wedges.

 

ARRANGE wedges around a platter.

 

SCATTER with fresh Blueberries.

 

GARNISH with herbal flowers – rosemary, sage, daylily, calendula, forsythia, basil.

 


Serving Ideas
with plain yoghurt
topped with Apple & Currant Granola – oil-free + sugar-free
topped with Goji Sunflower Seed Puffed Cereal
sprinkle over Super Seed Mix
topped with nuts, seeds, and coconut chips.

SWAP CITRUS use any combination of citrus fruits you like.

 

BLUEBERRIES – use fresh or frozen. If using frozen, sprinkle them over the citrus, then let sit for 30mins + before serving. As the blueberries defrost, they will release juice that will be lovely mixed with the citrus and make a great sauce.

 

SWAP BLUEBERRIES for any fresh or frozen berries, pomegranate seeds, fresh or dried fruits you like.

 

ADD RAW HONEY drizzled as thin as a spider’s web across the salad for extra sweetness.

 

SERRATED KNIFE = bread knife is easier to cut citrus, + citrus acid dulls a chef’s knife.
