Banana Date Blender Pikelets

Good morning banana, date, oat pikelets!  Pikelets are basically small pancakes that tend to be denser in texture and served not only for breakfast but also morning or afternoon tea in Australia, New Zealand and the UK.   


This simple nutrient-dense version that can be made Vegan or add an egg for a fluffier high protein bite.  Bananas are an excellent mineral + vitamin-rich food that helps with everything from blood sugar balancing to soothing digestion to boost your mood and keep you full longer.

  • 1 banana
  • 2 dates - rough chop, no seed
  • 1 cup rolled oats
  • 1 cup milk or water*
  • ¼ teaspoon salt
  • 1 tbsp oil* coconut, sunflower - optional
  • 1 egg* - optional - pikelets will be fluffier.


  • 2-3 teaspoons oil - coconut, sunflower


Banana Date Blender Pikelets


ADD BLENDER INGREDIENTS to a blender jug. Blend to a smooth batter 30 – 45 sec.  You may need to scrape the sides down and blend a little more until smooth, do not over blend.


HEAT a frying pan medium-low heat add 1/2 – 1 teaspoon coconut oil or some other neutral oil.   


POUR 3-4tbsp of the batter in the frypan forming small pikelets – just like small pancakes. 


COOK 2-3mins until batter rises and bubbles a little.  FLIP cook the other side another minute or so until cooked through and pancake springs back when you gently press it.


REPEAT the process until you have cooked all the batter,  I like to keep my cooked pancakes warm in a low oven, covered.


SERVE w’ raw honey, maple syrup, jam, butter, nut butter, tahini, fruit compote, whatever you love. Traditionally pikelets are served topped with jam and whipped cream.  Vanilla Cashew creme’ would be lush!

Tips + Suggestions

*MILK substitute; if you don’t have milk, you can use water.   ADD extra flavour = add ¼ cup coconut chips with 1 cup water, add a little more texture to the pikelets as well. 


DATES SUBSTITUTE with maple syrup or sugar.


ADDING AN EGG will do two things: make the pikelets fluffier = less dense and add protein.


*OIL in the batter is optional –  you can skip it; the texture will change slightly.
