“I want to help people buy locally and cook seasonally with confidence. I’m a farmers daughter. I deeply believe in small local farms and small food business models for quality, flavour and healthy farming practices. Botanical Kitchen is a way to share my knowledge as a chef to help support both the farmers and the people who want to buy and eat their food.” Karina Hines
“Small local farms can grow vibrant food sustainably using chemical-free regenerative agriculture and create food security in their local communities. I want to help support that and help people skill up cooking local & seasonal produce.
We have a health & environmental crisis in our world today; we are pouring chemicals over food and into our soils, and food manufacturing companies are adding more. We have a society with massive health concerns and food allergies ~ we need to change the way we grow and think about food and our health.” Karina Hines
Our Seasonal produce is based around North Eastern United States growing seasons.
The MENUS are based around Spring, Summer, Autumn – Fall & Winter and are categorised by months as we release weekly menus with recipes.
Anyone in the northern hemisphere can follow along with the menus and recipes though they might not exactly match what you have in your garden or local farms as your growing season might be different.
Each Weekly Menu has between 6-8 recipes that use similar seasonal ingredients to make cooking and life sensible, affordable & seasonal.
